Our first two batches of pure maple syrup are bottled and labeled. They were smaller batches because the trees haven't been running steadily until this week. We collected around 300 gallons of sap, and produced a total of around 10 gallons of finished syrup in these first two batches. The first batch was a nice amber color. The second batch (pictured) was just barely into the dark range. It's hard to tell the difference unless you hold them side by side.
This weekend we will have more like 500 gallons to process. We will also be doing some vanilla or cinnamon infused syrup this weekend - new this year!
